Cool climate, peppery Syrah

Shed Syrah 2021- Benalla, VIC

This wine is the ultimate expression of a Natural wine. Made in an open top fermenter (actually a drum) by hand picking and taking most of the stems out then letting it ferment on its own with no yeast, no sulphur or any other additions. When it stopped fermenting after a few weeks it was just pressed off into an old French Oak barrel and left to settle for 12 months.

And it’s delicious. It’s soft and juicy and shows classic cool climate Syrah pepper aromatics and nice soft full body mid palate with a smooth finish with soft tannins and low acid.

It’s had a tiny addition of about one tenth of commercial sulphur addition to protect it while we get it into your bottle. Take it home and drink it in the next few months because it’s not designed to keep.
