Since De Bortoli started making these botrytis wines in the Riverina 30 years ago, there has emerged a legitimate world class style of dessert wine from the area.
This style of wine is made by infecting Semillon grapes with noble rot or botrytis, a type of mould that causes tiny holes in the grapes skin, drawing out the water and increasing the natural sugars. The end result is a sweet dessert style of wine thats balanced and smooth, with a luscious mouthfeel. It's full of flavour, with dominant notes of lemon, honey, pineapple and ginger.
