Long Paddock are located in Castlemaine, Victoria, and we believe they're making some of the best cheese in Australia.
We've specially paired each of their divine cheeses with a wine that perfectly pronounces and compliments the flavours of the cheese. Gaëtan from Long Paddock will delve into his wealth of knowledge on cheesemaking and run you through how each cheese is crafted, and why we've paired it with each wine.

The Cheeses:
Silver Wattle - The creamiest soft lactic cheese, when cut this cheese blooms onto the plate with gooey spreadable goodness.
Driftwood - This cheese has been bark-belted with Native Spruce bark, so it takes on gorgeous woodsy and earthy characteristics. Soft and melty, it's heavenly when baked.
Banksia - 6-8 month aged Raclette Semi-Hard Cheese that is full of sweet-grassy and buttery-savoury characteristics.
Ironbark - 12 month Alpine style semi-hard with brothy, meaty and umami flavours, with a hint of sweetness.
Bluestone - A dense semi-soft blue cheese, with soft fruitiness and salty, spiky characteristic blue notes.
